In Short – The open dining room and lounge feature minimalist Southwestern décor. Rustic pueblo stone walls and exposed wooden beams are lit by small lamps and skylights. After more than 30 years chef Jim Smailer has kept the menu up-to-date without being faddish and still buys many of his ingredients from local farmers. The popular steamed artichoke appetizer and the teriyaki sirloin have been on the menu since the restaurant opened.
Good for food, bad for groups

I attended a party in their private backroom that had around 50 people. The room was great, separated from the rest of the diners and very accomodating. The service, however, is the reason I gave this review a 3 instead of a 4. They didn't bring everyone drinks and it took almost 40 minutes for our food to be served. (There were 4 preselected entrees to choose from). This is understandable as there was quite a large group. However they did not serve any appetizers like a salad or bread during the wait so all the guests were very hungry by the time the food arrived. And then even when the food arrived the portions were not very large. I don't need to eat a lot and it was barely enough to satisfy me so I can only guess that some guests were left not fully satisfied.
However, the food is very good and usually for a small group or a couple, it is definitely above average. And the atmosphere, too, is nice.

Fabulous service and food

My husband and I spent our twenty-third anniversary at the Boulder Cork this year. Upon entering the restaurant, the sweet hostess took our coats and hung them safely away in the closet, and took us to a fabulous table in the back of the restaurant next to the fireplace. I would suggest calling ahead for a reservation, as our server and the hostess were well aware that this was to be a very special evening for us, and literally made us feel like royalty.
The prices of the steaks were on the high side, but we are not eating at the outback steak house. Our lovely server Rachael informed us that the steaks were all natural and grass fed, so you pay for what you get. The wine list is out of this world to say the least, and as a wine connoisseur, some of the older vintages are exceptionally low in price considering the restaurant mark up. We ordered a George Latour BV private reserve '96 that was out of this world, and that alone would have made our night until the courses started coming.
My husband and I shared an Arugula & La Quercia Prosciutto salad, which they were happy to split without a split fee (many restaurants do this these days) then my husband got the filet oscar and I the most generous and tasty new york strip, and everything was cooked to perfection. We ordered the sides of asparagus, sauteed mushrooms, and some mashed potatoes. The sides are generous, and great for sharing, and I was so glad that we had the option to choose what we wanted so that we could mix it up a bit.
I would recommend this restaurant to anyone who is willing to pay a little extra for the best quality meats and seafood, enjoy the best wine, have exceptional service, and simply relax and have a fine but not uptight dining experience. This restaurant has been around since 1969, and it shows in their mastery. If you are unsure about where to spend a fabulous evening dining, give this place a try, you won't be disappointed. It is truly a little taste of Boulder history.
Great Quiet Restaurant

It is out of the way, but this makes for easy parking. There are not a lot of stand alone businesses anymore which makes this a nice place to go to. The rustic atmosphere along with the quiet atmosphere makes it so you can spend some quality time with that special someone. The steaks are tender and cooked to perfection every time. The servers pay attention to every detail and are quick to accommodate.
