This eatery's decor could be described as minimalist--with just a few tables and the serving line. The food is definitely New York style--there's freshly-sliced meats, less-than-bubbly service and a distinct lack of frou-frou choices. The bread is made fresh daily, and they don't skimp on the size. You'll find a decent portion of meat and cheese on sandwiches, which come in rolls or as hefty sub sizes.

This isn't the type of place of place you come for ambiance or customer service. You go because the subs are amazing. Its fresh, good quality Boars Head meat and hand made bread. I used to work there years ago and I can vouch for that. I have lived other places since Boulder and have yet to find a Philly cheese steak that compares....even in Philly.

When you enter the shop, you notice two things: 1- it's not very well kept; 2- there isn't much of a selection. Then you see the guy in the back who is always making rolls and he has quite the attitude. He walks over to the deli counter, unplugs the scale and rips it off the counter so he can measure out dough while the guys cutting the boars head have to walk into the back for measurements. Aside from the above, there isn't a coffee machine, so I walk up to the counter and order egg whites and a coffee, thinking this is an actual deli. They say we don't have coffee. Speechless, I shrug it off thinking this must be how they do it in Boulder. Then I see the plaque on the wall showing they have been voted the best deli for several years running. Anyone who has been to a Chicago or NY deli would laugh at this being called an Italian Deli. Perhaps the owner is Italian, but the lack of hospitality, pitiful selection and dirty floors are not indicative of an Italian Deli as I know it. Capisco?

Salvaggios is not your ordinary sandwich shop. It's an authentic deli experience. The sandwiches are made from the best and freshest ingredients and just have that true deli taste that you don't get from wanna-be's or well-known chains. I highly recommend this sandwich shop. It seems like a decent value for the money, too. Either location is great, but the one at Pearl and 26th is more of a real deli experience with the meats and cheeses on display than the small kiosk type shop on the Pearl Street Mall.
